Spiced Citrus Syrup:
- 2 cups fresh squeezed orange and nectarine juice
- 4 cups sugar
- zest from all of the oranges and nectarines
- zest from 2 lemons
- 1 cinnamon stick
- 2 each star anise
Using a Y peeler zest all of the oranges and nectarines and 2 lemons. Place all ingredients in a pot and bring to the boil. Reduce the heat and let simmer for 10-15 minutes. Allow to cool to room temperature, leaving the zest and spices in the syrup. Fine strain and reserve the zest for garnish. Place all the zest on a sheet tray with parchment paper and allow to dry.
